In the plant kingdom, legumes are the foods richest in protein. The nitrogen used in protein synthesis comes primarily from the plants' mineral nutrition. Nitrate reductase is the key enzyme in the entire process of nitrate assimilation by plants. However, this enzyme is highly sensitive to environmental changes, particularly drought. In the Mediterranean region, irregular rainfall is a major limiting factor for agricultural production. In our study, we sought to determine the optimal conditions for nitrate reductase activity, then to examine the enzyme's behavior and monitor changes in its activity during water stress-induced in the laboratory using mannitol-as well as changes in total protein content in Phaseolus vulgaris L.
