Mangal II

The debut cookbook from the landmark East London restaurant Mangal II presents a collection of contemporary Turkish recipes that capture the restaurant’s vibrant spirit. Authored by Sertaç Dirik, it offers insight into the food, creativity, and legacy of a family-driven culinary project that modernises Anatolian cuisine for the 21st century. With more than 60 original recipes, readers discover signature dishes such as Cull Yaw Köfte with Grilled Apple Sauce, Grilled Chickpea Hummus, Sourdough Pide Mushroom Manti, and Tahini Tart, complemented by heartfelt essays that illuminate the stories behind the dishes. The book features a foreword by Action Bronson, underscoring its unique place in today’s food world. Published by Phaidon Press, it is a hardcover edition with 248 pages and was released in October 2024.

Following in the footsteps of their father, Ali Dirik, a Turkish chef who immigrated to London and opened the UK’s first ocakbasi, the Dirik brothers have carried forward a legacy that began with Mangal I in 1994. The family’s journey—from immigrant roots to a celebrated London destination—forms a central narrative in the book and enriches the recipes with personal context and culinary philosophy.
